The Tremella mushroom - also known as snow mushroom or silver ear - is one of the most popular ingredients in traditional Chinese cuisine and medicine. 🍵 Chinese snow mushroom dessert soup with red dates
Preparation:
- Soak 50 g of dried tremella mushroom in warm water for 1 hour, then wash and chop thoroughly.
- Bring 1 liter of water to the boil with 10 pitted red dates and 1 tablespoon of rock sugar.
- Simmer on low heat until mushroom is soft and gel-like, about 30 minutes.
- Serve warm or chilled.
🥣 Tremella soup with goji berries and lotus
Preparation:
- Soak 50 g dried white mushroom for 1 hour, clean thoroughly and chop roughly.
- Bring to the boil with 1 tablespoon of dried goji berries, 1 handful of lotus seeds and 1.2 liters of water.
- Simmer over medium heat for about 45 minutes.
- Refine with a little honey or agave syrup and serve warm.
