🍮 Ube Halwa (Ube Halaya)

Preparation:

  1. Mix 60 g of Ube powder with 250 ml of hot water.
  2. Add 200 ml coconut milk, 50 g sugar and 1 tbsp margarine.
  3. Simmer over medium heat, stirring constantly, until the mixture thickens (approx. 10-15 minutes).
  4. Pour into a mold and let cool. Serve cold.

🧁 Ube cupcakes

Preparation:

  1. Mix 200 g flour, 100 g sugar and 1 teaspoon baking powder in a bowl.
  2. In another bowl, mix 2 tablespoons of ube powder with 150 ml of milk, add 1 egg and 60 ml of oil.
  3. Combine both mixtures and mix well.
  4. Fill into muffin tins and bake at 180 °C for about 20 minutes.

🥤 Ube milkshake

Preparation:

  1. Puree 2 tablespoons of ube powder with 200 ml of milk and 1-2 scoops of vanilla ice cream in a blender.
  2. Sweeten as desired and garnish with cream.
